Recipe of the week    

Coconut Cumin Rice

This is a nice change from plain basmati rice and creates wonderful aromatic smells in the kitchen!

  • 1 Tbsp coconut oil
  • 1/2 Tbsp cumin seeds
  • 1 cup of basmatic rice
  • ¼ tsp of sea salt or less
  • 1.5 cups of boiling water

 I prefer to use a pressure cooker as it makes perfect rice with 5-minutes of heat but you can use a pot with a loose lid too. Under medium heat, place the coconut oil in a pot or pressure cooker. Add the cumin seeds and cook til brown just a minute or two. Add the dry rice and stir a few minutes til the rice looks shiny. Add the salt then the boiling water. (Water should be boiling or much will be lost to evaporation as the water hits the hot pot.) With a pressure cooker over medium heat, heat to ½ atmosphere of pressure (first red line) and adjust the heat to keep the pressure from rising more. Cook at that pressure for 5 minutes. Then turn off the heat and let the pot sit about 10-minutes until you can open the lid. OR with a pot - it should either have a heavy bottom or use a heat-diffuser to minimize scorching - just heat to simmer then cover with a loose-fitting lid about 20-minutes until all water is absorbed. Finally, fluff the rice with a fork to prevent clumping

Listening Meditation 

I spoke in my 4th show about observing yourself using your senses. This week practice this with hearing. Just observe the sounds you hear. Next take it deeper and more subtle. Observe yourself in the act of listening. These are two different spaces to experience! In the first case, the thing that creates the sound is the object of your awareness. In the second case, YOU are the object of your awareness while you are listening. Practice this as much as possible when you are alone. Then bring this same non-judgmental awareness to when you are listening to someone. This is the hard part! We might be hearing the person but not LISTENING! Because instead we are listening to the voice in our head and not to what is being said. We think we know what they will say or are gathering our side of the story. True listening means that you have completely lost your sense of self in the other person’s story. You don’t even hear their words – your mind creates a picture of what they are saying! In that beautiful space, so much healing happens! Sometimes people will be so open and may even solve their own problems. Try this especially with your children. Many times they act out because we aren’t really listening to them. We are on our phone or computer. Giving them the attention they deserve is like filling their gas tank. They may need only 10-minutes with you but if you give them a space of full listening that really makes them calm and happy that lasts for hours! Plus you will feel complete too!
