Recipe of the week    

Split Pea Soup for 6

The pressure cooker was made for split pea soup!

one quarter of a chopped onion (opt.)
1 Tbsp sunflower oil
1 Tbsp Herbs de Provence
3 large carrots - cubed
2 stalks of celery - finely chopped
2 cups dry split peas (inspected and rinsed to remove dirt)
sea salt + pepper
4 Tbsp brown rice vinegar

In a large pot or pressure cooker, sauté onion in sunflower oil with herbs. Onion is optional. Then add carrots and celery. Sauté a few more minutes. Next add cleaned split . Finally add 7 cups of pre-boiled water. Stir everything then close the pressure cooker and bring it to one atmosphere pressure for 10 minutes then turn off the heat for another 10 minutes until the pressure releases the lid lock. If you don’t use a pressure cooker it might take two hours until the split peas get soft. Add additional salt and pepper if needed then stir in vinegar. Put soup in the blender to make it 'soup-er' smooth!

Ultimate raw chocolate peanut butter cup

Came up with this last week and had to share it! Eat tiny bites as this has a caffeine kick!

10 raw cacao beans
2 Tbsp of raw sugar like coconut sugar,  jaggery, or Sucanat
2 Tbsp of peanut or almond butter
1 tsp melted coconut oil
1/2 tsp sesame seeds

Grind cocoa beans in a coffee grinder till ground into a powder. In a small bowl, mix all ingredients. Form into a soft ball or a cup. Sprinkle sesame seeds on top. Let it sit at least for 30 minutes in the refrigerator. Nibble, savor, and enjoy!

Evening Meditation to be done every night!

Shakti Dharana from "Meditation is for You"

This book has many diverse and powerful meditation techniques but Shakti Dharana is my favorite. I have been doing this every night for two years. This IS the solution to a great night's sleep!  If you wake up in the middle of the night, then use this to get back to sleep.

This meditation is more like a prayer than a meditation because it is a direct way of putting you in touch with the energy of all Existence. It should be practiced at night just before you go to sleep because this makes you sleepy. 
  •  Choose a cool, dark room with good ventilation. You can also practice outdoors if you want. Kneel on the ground. Use a mat if it helps you feel more comfortable. 
  • With the top of your feet flat on the floor, raise yourself up on your knees so that your thighs are vertical. 
  • Next raise both arms up with your palms facing toward the sky. Turn your face skyward and wait. 
  • In a moment, you will feel the energy of existence flowing into you. Don’t resist. Let the energy enter into you. You will feel a trembling in your arms. Then slowly your whole body will begin to tremble and sway slightly with the energy. Just allow the movements. Drink in the energy. You become the point where heaven and earth merge. You begin to feel as if your body is no more. 
  • When you feel completely full, bend down and put your forehead on the ground while you tuck your toes under your feet to stretch the arches Place your hands - palms down - next to your head with your elbows touching your knees. So you are slightly inverted with your bottom up. 
  • Allow the energy which had filled you to pour into the earth from your forehead. Stay here for several breaths until you feel empty.
  • Next in this position place the top of your feet on the floor again and raise up on your knees so that your palms and face point skyward. Stay in this position and fill up with energy as before.
  • Then pour out the energy with your forehead on the ground as before.
  • After a few rounds, often I will fall asleep in this inverted position! It feels like the words in my head are actually flowing into the earth!
  • Repeat the full cycle seven times. Each time, each of the seven major chakras becomes energized. If you repeated more than seven times, you may feel over-energized and restless.
  • When you have finished your prayer, immediately go to bed and fall asleep in that prayerful state. Fall into that energy, sleep into it. When you awake, you will feel refreshed and revitalized.
