Recipe of the week    

Ayurvedic Green Beans (serves 4)

A much healthier Thanksgiving recipe than mushroom soup green beans.
Big handful of fresh green beans for 4. Green beans should snap when folded in half. Cut off the tips. Can leave whole or cut into 2-inch pieces. Boil about 6 minutes until the beans are somewhat cooked but not mushy. Drain and cool.

Meanwhile make the dressing that is great on other cooked vegetables too!

  • 2 Tbsp olive oil 
  • 2 Tbsp whole brown mustard seeds
  • ¼ tsp of sea salt
  • 1 Tbsp brown rice vinegar 

 Heat the olive oil in a small deep pot under medium heat. Add the mustard seeds and turn up the heat just high enough that the seeds pop for a minute but without burning the oil. Make sure you have lid on the pot as the hot seeds might jump out. Let the seeds and oil cool then add the salt and vinegar. Stir and mix with the green beans.

Meditation for the week

Driving Meditation 

I came up with this meditation after reading a small but mind-blowing book called Beyond The Siddhis: Supernatural Powers and the Sutras of Patanjali. This technique can be applied to anything that you do automatically – like bathing, brushing your teeth or even driving! Last summer my son and I drove from Mt. Shasta (where I found this book!) to the SF Bay Area and we decided to take the scenic route through Mt. Lassen. The drive was about 8 hours yet I was really energized and alert doing this meditation.

While I was driving, especially on the winding mountain roads, I witnessed myself accelerate, break, and turn the wheel as needed to follow my lane. So I did not have any other thoughts or judgments. I spoke very little. I just watched myself driving and listening. I noticed my son was also in a calm space of just making up songs. We both arrived happy, peaceful, and energized!

Recipe of the week    

Sicilian Vegetable Salad

This works best with sweated vegetables. Sweating vegetables means to place the vegetables in the pot with a drizzle of olive oil and few shakes of sea salt but with NO water. Use a pot with a tight-fitting lid or use a pressure cooker but keep the heat low enough to not increase the pressure. Leave the temperature on medium-low for about 10 – 20 minutes. The vegetables self-steam in their own juice which brings out their natural sweetness. I have used sliced ¼-inch wide 4 carrots, ¼ onion, and 3 celery stalks, with 3-medium red potatoes (1-inch cubes) with this recipe. Instead of potatoes, you can add 1-can of drained warmed, cooked garbanzo or kidney beans too. I mix the beans in at the end and not cook them with the other vegetables. For added color and nutrition, add ½ inch x 2-inch strips of ½ bunch of kale that has been steamed about 11-minutes. Mix all with the dressing below. This dish is good warm or cold the next day!


Simple dressing: Splash of unsweetened brown rice vinegar and sea salt to taste. Brown rice vinegar and sea salt is magical or any steamed vegetables!


Sicilian Dressing (adapted from The Ayurvedic Cookbook):

1 Tbsp brown rice vinegar
1 tsp dry organo
1 tsp dry basil
¼ tsp dry or fresh rosemary
½ tsp sea salt
1 Tbsp frozen apple juice
2 Tbsp olive oil
1 Tbsp chia seeds – ground in a coffee grinder (optional to thicken dressing)


Put vinegar in a small bowl and whisk in the spices. Add the apple juice, oil, and chia last.

Meditation for the week

Walking Meditation 

"Walking and Falling" by Laurie Anderson. Fun song from a very creative artist to listen to before you start your walking meditation.

Practice Esther's technique for glide walking. To move your unweighted leg forward, contract the gluteus medius muscle at the top of the buttocks. This muscle can be found by rotating your leg outward 45 degrees  then lifting the leg behind you. Basically if you are standing on that leg and contract the gluteus medius muscle as if to lift that leg behind you then that action pushes you forward! But then you keep that muscle engaged so that the other foot lands softly. Do this slowly with awareness - focus on engaging that muscle for one leg as you walk for a few minutes then switch to just engaging that muscle in the other leg. Finally alternate to reprogram your walking! This helps to relieve lower back problems and takes the flat out of your bottom! Do this with full awareness - even around the house slowly  - to make this your walking meditation.

Recipe of the week    

Hot sesame chia breakfast


Sesame seeds and chia seeds are both outstanding for building your bones. The chia also has omega-3 which is good for your joints and brain. I have been doing a liquid diet mediation this month and came up with this quick hot liquid breakfast.

This works best with a coffee grinder rather than a blender.
Put in a coffee grinder:
  • 1 Tbsp chia
  • 1 Tbsp sesame seeds
  • cinnamon
  • pinch of sea salt
  • sweetener of choice: agave nektar, coconut sugar, or cane sugar

Grind all til fine. Transfer the mix to a 12-oz cup. Add 1 cup hot water or hot almond, soy, or cow's milk.

Or just use 1/3 c. liquid and leave it as a thick pudding and add apples and top with Greek yogurt.
Optional to add cinnamon and coconut oil for extra brain food!
Let the mixture sit a few minutes for the chia to thicken it.

If you are traveling, bring the ground mixture with you. 
Or the seeds and your coffee grinder too!

I once added this mix to a café latte and it was really good!

Eating Meditation 


Whenever you eat, just eat! That’s it! Do not do anything else. No TV, no checking email, no reading a book. If possible even eat alone. Really taste your food. Be grateful for all the people that made your food possible – farmers, suppliers, grocery store employees, and cooks. Try this for 21 days straight!

My fav tip from this course is how to handle time. You cannot manage it. Just flow with it. Make a list the night before. The next day do each item without thought of the next item. Pumpkin Pie Smoothie

Start with a fresh 10-inch pumpkin from a pumpkin patch.
Carve face Halloween day. That night, cut off the face and cut pumpkin into 4 large pieces. Smear both sides with oil and water. Place on a large baking sheet with at least 1-inch sides. Add water to keep the pumpkin moist. Slow bake at 325 for 3 hours or til pieces collapse. After pumpkin has cooled, peel the browned skin from the flesh. Cut the flesh into 2-inch cubes. Put two cups at a time in a freezer bag then freeze. A 10-inch pumpkin makes about 10-12-cups which is good for a year of bread, soup, and smoothies. Just thaw the pumpkin and blend it.

No dates? Substitute coconut sugar
Add 1 Tbsp Cafix (roasted barley) to give it a rich roasted coffee flavor without the caffeine. 
Top with whipped coconut cream!
                               

Meditations for the week

Witnessing
Observe yourself in the act of using your 5 senses, So your awareness moves to inside of YOU and away from the sense object outside of you. Try this for several seconds to experience a pure space of peacefulness. Do it many times a day.

Poornatwa: Mirror meditation
Whenever you experience an irritation inside - a feeling of powerlessness like anger, frustration, depression - any suffering, then look at your image in the mirror. Go back in time to observe each time that emotion was triggered in your life until you can discover the first experience of powerlessness. Then relive this moment when you were that age - cry, scream, pout, whatever you did as that child. Next as an adult, visualize yourself being with the child and giving an understanding of what happened. Allow adult you to be with the child you until the negative emotion has shifted to a positive one. After your past and present cognition has taken the emotional charge out of the event, then talk to the people involved in the incident to get their understanding. If they have already died, then talk to them using your image in the mirror. To dig out the root of your irritations, you have to relive the event to relieve it! Do this every evening after reflecting on your day.
