Recipe of the week

Hummus (4 servings)

12-oz can garbanzo beans           preferably unsalted
juice of half a lemon
1 Tbsp tahini (sesame butter)
1 to 2 Tbsp olive oil
1/3 tsp sea salt 
paprika to taste
1 clove chopped garlic    optional

Place all in a small pot (do not drain beans) and simmer 5-minutes. Put in a blender and add additional oil if needed. Use as a side dish, dip, or sandwich spread. 

Meditation of the week

Mirror Meditation to break complaining and worrying 
  • Find a time where you will be alone for about 30 minutes. Sit comfortably in front of a mirror. Look deeply into your own eyes. Then just say everything that you’re worried about. Name all your complaints to your reflection. Really get it all out of your system. Don’t be judgmental or harsh on yourself. Keep venting until you feel there is nothing else to vent about. Eventually you start becoming your own therapist! It’s an amazing experience to go through. Whenever you feel the urge to complain just complain to your reflection rather than wearing down other listeners.

Recipe of the week

Kale Salad (4 servings )

  • 1 bunch kale

  • juice of half a lemon
  • ½ tsp dried basil
  • 2 Tbsp frozen apple juice*
  • black pepper to taste
  • 1 Tbsp sunflower oil**
First take one bunch of kale. Wash each leaf. Hold the leafy end of the kale with one hand. Fold the leaf in half. Remove the rib by grabbing the leaf near the stem and pulling toward the tip. Tear the leaves so that they are in squares of about 2 inches. Place the leaves in a steamer for about 11 to 15 minutes. Kale grown in the winter seems to need less cooking. Check the leaves after about 10 minutes to see if they are done. They should be slightly tender but not mushy. If the kale is overcooked you will notice a stronger smell.
While the kale is cooking, mix together all the dressing ingredients and let it sit for 10-minutes.  
*I have also substituted maple syrup for apple juice and that was okay. 
**I have tried this recipe with olive oil but olive oil is too strong.
When the kale is finished, lay the leaves out so that they drain and cool quickly. Finally mix the dressing with the kale. A sprinkle of toasted sesame seeds on top makes a nice final presentation too. This sweet tart dressing can be used on other steamed vegetables too!

Meditation of the week

  • In this technique you simply HUM. You take a deep breath then hum for as long as you can. Make the sound come from your chest not from just lips. Then after you have squeezed out the last bit of sound, take a short deep inhalation and hum again. This develops core strength, quiets the mind, energizes your heart, expands your lung capacity! And it's fun and can be done with kids too! Try for 5-minutes then work up to 21-minutes. Then sit quietly and notice how energized, empty, and peaceful you feel!

Chia Drink (1 serving )
  • water 
  • 2 Tbsp chia seeds
Chia is the seed from Mexican sage or Salvia columbariae that grows in the Central American and Californian chapparal. Chia beverages are the latest healthy drink appearing in fancy bottles full of gelatinous seeds in suspension.  It's easy and inexpensive to make your own!
Just before bed, fill a 12-oz shakeable container 3/4 full of water. Add the chia seeds and shake. Let it sit out or chill in the frig. The next morning just shake and sip all morning!  Or if you cannot wait overnight, grind the seeds in a blender or coffee grinder then add hot water. You can eat the chia dry too as long as you don't wear braces since the seeds absorb water and really stick to your teeth!

Watermelon Slushie (1 serving )
  • 1 cup of sweet watermelon
  • handful of crushed ice plus cold water
  • juice of 1/4 of fresh lime
  • Blend!
Watermelons really hydrate you but are too sugary alone. Dilluting the sweetness with ice and water slows down the sugar intake into your body. Adding the lime balances the sweetness just right! Meditation of the week

Easy guide to meditation
  • Sit comfortably cross-legged on the floor or upright in a chair but make sure your back is not touching the chair. You are more alert by supporting your own spine without the chair. Sitting in a chair takes more core-strength than sitting cross-legged. However, when you sit cross-legged, chose a firm pillow that allows your thighs to be horizontal or slope down to the floor. Otherwise your hips are too tight for cross-legged sitting! Over the months, with daily practice you can eventually sit without a pillow!
  • Simply watch the thoughts appear in your mind without judging them - otherwise the judgment creates more thoughts! You can even observe the space between the thoughts! It might be a micro-second but eventually you can increase this empty space. These thought appear like fish jumping - just don't feed and play with the fish! 
  • If you did follow a thought then catch yourself. Just bring your awareness to your body: your heart region;  the cool air entering your nose - the warm air leaving; the space between your eyebrows... With your awareness on your body, you are NOT bringing awareness to those pesky thoughts!
  • Do this at the same time every day when it is quiet in the same place. Start with just 10 minutes then gradually add more time. After a few weeks, you have made it a habit! Eventually the space of watching your thoughts will happen outside of your formal meditation time which is the goal of meditation: 'To be actively calm while calmly active' (Paramahansa Yogananda)

I mentioned Autobiography of a Yogi  a spiritual classic since 1946. I recommend the blue covered version as it is a reprint of the original 1946 version. I love having the book near my bed but you can read this spiritual classic on-line too! As soon as you finish the book, magic happens!!!

  • 4-5 leaves of grocery-store dandelion (backyard dandelions are too bitter)
  • handful of red or black seedless grapes
  • handful of crushed ice plus cold water
  • Blend!

Even their scientific name means 'official detoxifier' especially for your liver!
All parts are edible.
Even the flowers in your yard taste good! 
Eat your dandelions  - don't herbicide them!

Bring awareness to your thoughts

Our minds are like a crazy monkey bitten by a scorpion and possessed by a ghost!
Our minds are simply the composite of all of our thoughts - our inner conversation. 
But we can actually live without all this chatter!
The first step is to become aware of the chatter in just 5 minutes!
Take a paper and pen down all your random thought for the next 5 mintues.
You will see how random and disconnected your thoughts are. 
Just like boisterous kids in a classroom settle when the teacher walks in, 
so too your thoughts per second or TPS will go down as you simply watch
them without judgement. 
Try this and post what your discover!
